"We've tried to make the candidate journey a memorable one. In the last few years I've seen recruitment adapt and you've have to flex your style to move with the times. The arrival of tech in the candidate journey has certainly changed the process. Going forward, post COVID-19, recruiters will need a really good insight into the candidate and what they are looking for from an employer. Businesses will have to make sure that interview or assessment centres are engaging and formative and, most importantly, be transparent as a company that candidates will want to work for."

“We’re currently doing some initiatives with Skills London signposting young people to hospitality and keeping that spirit alive.
In 2021, the Skills London event is going to be the biggest yet so we're creating a hospitality world where everyone that come into Excel is going to be excited by how brilliant the sector is. We're really excited about how innovative the staging will be, based on gamification and artificial intelligence.
What we've got to remember for Skills London is we're going to be up against other sectors that may be a bit more interesting to a younger person, a bit more exciting. So we want is for the hospitality industry to get them excited, using technologies that they can relate to and are available now. "

“We will be taking out some tables and making sure people can dine really safely with us. We've got our menus ready. They're slightly simpler, with less on the main menu so we can run our kitchens with fewer chefs who can safely work together. “There will be more emphasis on specials and our chefs, a team of really solid guys who know Peach very well.
With the reduced menus our chefs will be able to decide their own specials, reacting to the weather or the supply better. It means that there's lots of opportunity for them to get creative and keep that excitement alive."

The level of respect is going to go up because there’s more appreciation, not only of what we do but because hospitality has been missed.
In terms of trends, it's going to be exciting. Deliveries and takeaways are booming and it will be really interesting to see if people continue to eat at home and whether it continues to be a surging growth area. It probably will continue for a long, long time; the days have been squashed into small, intimate rooms will be less popular in the future.

We need to be able to reopen as a Scottish hospitality industry and move forward but we also need to make this time count. You know, my father in law said, "don't get to the end of this time and think, "I should have done more because we're never going to have this time again’.
